European edible sea urchin

Echinus esculentus

The sea urchins are the most studied echinoderms in Iceland waters and several species are known. The most common species in shallow water are the green sea urchin (Strongylocentrotus droebachiensis) and European edible sea urchin (both are actually edible). The European edible sea urchin is reddish in color and larger than the green sea urchin (which is greenish in colour). The green sea urchin is much more common.
